Florentine slice is probably one of my top three favourite recipes to bake at Christmas time, so I thought you might enjoy the recipe too. We usually cook up a tray of this, slice it up and then keep it in the fridge covered with cling wrap, but sometimes there just isn’t enough fridge space for this, so it’s fine in a cool spot in the cupboard too.
- 200 grams milk chocolate
- White chocolate – small amount for drizzling
- 2 heaped cups of cornflakes, lightly crushed
- 1/2 cup (100 grams) glace cherries, chopped
- 1/2 cup chopped nuts of choice – walnuts, hazelnuts, cashews, etc..
- 6 soft dried apricots – chopped
- 1/4 cup plain flour
- 90 grams butter
- 1/2 cup dark brown sugar
- 1/2 cup condensed milk
- 1/2 teaspoon vanilla essence
Preheat oven – 180 degrees.
Line a slice tin with foil (or baking paper) and grease. Melt the 200 grams of milk chocolate and pour into the slice tin. Pop in the fridge to set.
In a large bowl mix the cornflakes, glace cherries, nuts, apricots and plain flour.
Over a low heat on the stove top, melt and combine the butter, brown sugar, condensed milk and vanilla essence.
Combine the wet and dry ingredients to create the topping and then press over the top of the chocolate. Bake in the oven for 15 minutes.
When cold, melt white chocolate and drizzle over the top. Cut into slices when cold and enjoy.
